Marmite Poppy-Seed Cookies

INGREDIENTS

NOTE:
Good by themselves or with cheese.

MAKES: 20 cookies | PREP: 30 mins | COOK: 15 mins

  1. Put the wholemeal and plain flour, butter and Marmite into a food processor and blend until it comes together.
  2. Spread a large piece of clingfilm onto a work surface and pour on the mixture. Wrap it tightly and roll into a 2 inch thick sausage. Place the sausage into a fridge for ½ hour until firm.
  3. Meanwhile, heat an oven to 180°C / Gas Mark 4.
  4. Spread the poppy seeds evenly onto a chopping board and carefully roll the chilled sausage in them, coating to the edges.
  5. Line a baking tray with baking paper. Cut the sausage roll into thin biscuit slices and arrange on the baking tray.
  6. Bake in the hot oven for 12-15 minutes until firm.
  7. Remove from the oven and allow to cool before storing in a tin.
