Marmite Poppy-Seed Cookies
INGREDIENTS
- 100 g. wholemeal flour
- 100 g. plain flour
- 150 g. unsalted butter, chilled and chopped into cubes
- 3 tsp. Marmite
- 1 tbsp. black poppy seeds

Good by themselves or with cheese.
MAKES: 20 cookies | PREP: 30 mins | COOK: 15 mins
- Put the wholemeal and plain flour, butter and Marmite into a food processor and blend until it comes together.
- Spread a large piece of clingfilm onto a work surface and pour on the mixture. Wrap it tightly and roll into a 2 inch thick sausage. Place the sausage into a fridge for ½ hour until firm.
- Meanwhile, heat an oven to 180°C / Gas Mark 4.
- Spread the poppy seeds evenly onto a chopping board and carefully roll the chilled sausage in them, coating to the edges.
- Line a baking tray with baking paper. Cut the sausage roll into thin biscuit slices and arrange on the baking tray.
- Bake in the hot oven for 12-15 minutes until firm.
- Remove from the oven and allow to cool before storing in a tin.
