Fruit Squares

INGREDIENTS

MAKES: 12 squares | PREP: 10 mins | COOK: 30 mins

  1. Pre-heat an oven to 190°C / Gas Mark 5.
  2. Melt the margarine in a saucepan over a low heat.
  3. Meanwhile, beat the egg. Add it, the self raising flour, brown sugar and mixed fruit to the saucepan, stirring well.
  4. Grease a deepish (2 in. / 5 cm.) square dish. Add the mixture and spread it out evenly.
  5. Place in the oven for 20 – 30 minutes until cooked.
  6. Scatter with castor / granulated sugar while still hot and cut into squares.
  7. Allow to cool and store in a biscuit or cake tin.
