Fruit Squares
INGREDIENTS
- 4 oz. / 113 g. margarine
- 1 standard sized egg
- 6 oz. / 175 g. self raising flour
- 1 cup brown sugar
- 2 cups mixed fruit
- castor / granulated sugar for scattering when cooked
MAKES: 12 squares | PREP: 10 mins | COOK: 30 mins
- Pre-heat an oven to 190°C / Gas Mark 5.
- Melt the margarine in a saucepan over a low heat.
- Meanwhile, beat the egg. Add it, the self raising flour, brown sugar and mixed fruit to the saucepan, stirring well.
- Grease a deepish (2 in. / 5 cm.) square dish. Add the mixture and spread it out evenly.
- Place in the oven for 20 – 30 minutes until cooked.
- Scatter with castor / granulated sugar while still hot and cut into squares.
- Allow to cool and store in a biscuit or cake tin.
